Structure of saccharides

چکیده
Standard monosaccharides are widely distributed in nature and easily obtained by degredation of polysaccharides or isolation from various materials for example plants, microorganisms, yeast, marine sources or milk. However, the structures of many sugars which are known today are different from the general formula Cn(H2O)n. They are modified by amino groups or deoxygenation to name but a few. Many of them have been given trivial names as they are frequently found as constituents of different classes of biologically active compounds such as hormones, alkaloids, antibiotics, or cardiac glycosides.

Thermal aggregation of egg white proteins as affected by saccharides
Thermal characteristics of egg white proteins (EWP) may differ in the presence of saccharides. Therefore, the influence of saccharides including carboxymethyl cellulose (CMC), pectin, sucrose and maltodextrin and heating time on physicochemical characteristics of EWP as a whole were studied. Investigation of Heat Coagulation Time (HCT), solubility, turbidity and protein secondary structure of h...
متن کاملSuppressive effect of trehalose on acrylamide formation from asparagine and reducing saccharides.
The influence of saccharides on the formation of acrylamide (AcA) was investigated. The reducing saccharides reacted with asaparagine to form AcA, but the non-reducing saccharides, except sucrose, gave no AcA. AcA formation from a mixture containing glucose and asaparagaine was suppressed by the non-reducing saccharides, especially trehalose (76% suppression) and neotrehalose (75% suppression)....
متن کاملEffects of Interactions between ZnO Nanoparticles and Saccharides on Biological Responses
Zinc oxide (ZnO) nanoparticles (NPs) are widely used as a Zn supplement, because Zn plays a role in many cellular and immune functions but public concern about their potentially undesirable effects on the human body is growing. When NPs are added in food matrices, interactions between NPs and food components occur, which can affect biological systems. In this study, interactions between ZnO NPs...

متن کاملMicrobial Exopolysaccharides: A Review of Their Function and Application in Food Sciences
Extracellular polymeric substances are defined as high molecular weight compounds secreted by the microorganisms in the surrounding area. Since these extracellular substances are mainly polysaccharide, they are named exopolysaccharide. Microbial exopolysaccharides composed of sugar residue have growing interest as a new class of microbial products which can be used in food, pharmaceutical, and ...
متن کاملProtection of protein secondary structure by saccharides of different molecular weights during freeze-drying.
The protective effects of saccharides with various molecular weights (glucose, maltose, maltotriose, maltotetraose, maltopentaose, maltoheptaose, dextran 1060, dextran 4900, and dextran 10200) against lyophilization-induced structural perturbation of model proteins (BSA, ovalbumin) were studied. Fourier transform infrared (FT-IR) analysis of the proteins in initial solutions and freeze-dried so...
